In 1995, after 10 years of running L'Auberge, proprietress Nicole Plisson and her staff opened Nicole's Bistro at the historic Quackenbush House, one of Albany's most treasured landmarks. Since then, Nicole's Bistro has been serving the finest cuisine to satisfied customers from all over the Capital Region and beyond. Nicole Plisson comes from a family of restaurateurs in the Loire Valley and gives the best of the French culinary tradition an innovative, international flair.

Notable guests of Nicole's Bistro include John F. Kennedy, Jr., actor John Aston, author William Kennedy, and Governor George Pataki, just to name a few.

Quackenbush House is located at the corner of Clinton Avenue and Broadway, within walking distance of the Palace Theatre and Capital Repertory Theatre.

Local historians believe that Quackenbush House is one of the oldest existing Dutch urban structures in the nation. Built circa 1730, it is the City of Albany's oldest home. First adjacent to the family's brick kilns (Peter Quackenbush was a brick maker for Kilian Van Rensselaer), the land on which the house rests today was owned by the Quackenbush family since the early 18th century.

The house was reputedly used as a headquarters in the French and Indian War, and as a jail for British General John Burgoyne after the Battle of Saratoga. In 1824 it was called Mansion House.

After serving as a residence for more than a century, it was reportedly a bakery, and then a furniture store, before it's present renovation. The property was scheduled for demolition to make way for the construction of the Clinton Square interchange, but was spared because of its significant historical value.
